How do I backup my jailbroken iPod touch?

I've got an iPod touch 2nd generation with 2.2.1 firmware which I've recently jailbroken using a program called redsn0w. I need to restore it soon, and was wondering how I could backup my jailbroken iPod touch. Is it possible?
